Another option is simply using ceiling lights. The one biggest drawback to this is it becomes difficult to get the light where you need it. Placing ceiling lights behind you in a kitchen causes your body to cast a shadow on your work area. Certainly not the best situation for a high task area like a countertop.
Task lighting is an important aspect of any kitchen lighting design. Most often it is the under cabinet lighting that is referred to as Task lighting which is correct. It is however, not the only place for task lights. Simply placing a single recessed light over the sink, on a separate switch qualifies as a task light.
There are many different types of undercabinet lights and manufacturers who make them. The basic types are individual fixtures, which can be fluorescent, halogen or xenon, or track type low voltage linear systems, which are halogen or xenon. In some areas of the country, you may be restricted by local building codes and be forced to use fluorescent light fixtures. Today's fluorescents are slimline and provide a good quality light. They are the most economical choice.
